Chinese Shredded Chicken

The dish of Chinese Shredded Chicken is a good choice for appetizer.
To make it, the basic ingredient include 6 chicken legs. First of all, boil the chicken legs in salty water for about twenty minutes till the meat become very soft. Take it out and soak it in cold water to cool it down. Then shred the chicken with bare hand into narrow strips or pieces.
To make the seasoning, shredded ginger and garlic. Then mix it with a little Zanthoxylum and red pepper. Depending on personal taste for spicy food, the amount of pepper could be adjust. Fry the mixture in 50g sesame oil till good smells come out. Pour the source on the the shredded chicken when it is still very hot. Add some shredded spring onion.
Then mix them well before serve.
