Submitted by admin on Friday, 25 September 2009No Comment

For all its complex flavours, Curry is one of the easiest and most satisfying dishes to make.
The basic ingredients to make a dish that serve four people in 2.5 hours include 800g diced beef, 250g grated coconut, 2tbsp light soy sauce, 4tbsp groundnut oil, 2 sliced onions, 1 to 2 tbsp red curry paste, 200ml coconut milk, 200ml beef stock, 1 finely chopped chillli, 1 finely chopped garlic clove, 1 cinnamon stick, 2 kaffir lime leaves, 1 to 2 tsp cornflour, some lime juice and Cayenne pepper.
There are three steps to prepare the curry dish.
First of all, mix the meat, grated coconut and the light soy sauce in a bowl. Cover and marinate for two hours. Then heat 2 tbsp of oil in a wok and sweat the onions until translucent. Remove the onions and brown the meat in the remaining oil.
Secondly, stir in the curry paste and fry briefly. Deglaze with the coconut milk and stock, then transfer it all to a pan. Add chilli, garlic, onions, cinnamon and lime leaves and cook over a low heat for about two hours until tender.
Thirdly, removed the cinnamon and lime leaves. Mix the cornflour with a little cold water and stir in. Season to taste with soy sauce, cayenne pepper and lime juice. Then it could be served with steamed Basmatic rice.
