How to Make Shanghai Style Stewed Crab

Stewed Crab is one of the very popular dishes in Shanghai style of food.
To make this delicious dish, the basic ingredients include 3 live crabs, 1/2 tbsp chopped ginger, 2 tbsp chopped green onion, and 4 tbsp flour.
First of all, in the preparation step, choose those small crabs, which are about 200 to 250g each, for this dish. Cut each crab into halves.
Then, dip the cutting side of crab into the wine, then coat that side with flour.
Thirdly, heat 2 tbsp of oil in a wok, fry the crabs with the cutting side down to brown.
Fourthly, add ginger and half amount of green onion and stir fry till fragrant. Spinkle wine, soy sauce, sugar as well as water in. Cover the wok and cook for 4 to 5 minutes over medium low heat till the crab is cooked.
Fifthly, mix the remaining flour with some water to make a flour batter. Thicken the crab sauce with flour batter and sprinkle green onion on top. Then it’s ready to be served.
