Lydford Gorge Home-made Chutney

It is a very delicious chutney I found when I took a trip to Lydford Gorge. It tastes quite special.
To make the chutney, the basic recipe include 4lbs onions, 4bls apples, 2lbs dried apricots, 2lbs sultanas, 3 pints of malt vinegar, 4lbs dard brown sugar and 8 level tsps mild curry powder.
First of all, dice the apples, onions, dates and apricots.
Then add in the sultanas, vinegar, sugar and curry powder and leave in a large covered container for at least 7 days.
Then decant into jars and use within 3 months.
