Mediterranean Couscous Salad

Mediterranean Couscous Salad can be a great option of summer salad.
The basic ingredient to make the dish include couscous, vegetable stock, sun-dried or sunblush tomatoes, quartered avocados, black olives, a handful of nuts, feta, green salad leaves, etc.
For the dressing, whisking together some olive oil and lemon juice with seasoning.
Forst of all, tip the couscous into a large bowl, stir in the stock, cover and leave to soak for 5 minutes.
Then stir some dressing into the couscous and gently mix in the tomatoes, avocados, olives, nuts and feta. Taste for seasoning.
Last but not least, toss the salad leaves with the remaining dressing, divide between four plates and spoon the couscous on top.
