Ras el Hanout

Ras el Hanout is a special kind of Moroccan seasoning, which is used in pastilla, sometimes rubbed on meats, and stirred into couscous or rice.
In Arabic, the name of Ras el Hanout means “head of the shop”, implying that it is made by the master in the shop.
There is no definitive set combination of spices that makes up the seasoning. Some recipes even include over one hundred ingredients. But usually, it’s mixed with a blend of herbs and spices, including Nutmeg, Allspice, Cinnamon, Cumin, Cayenne, Ginger, Clove, Coriander, Pepper, Saffron, Turmeric and Cardamom etc.
