Steamed Mud Carp’s Head with Chilli is one of the most popular Hunan dishes. The spicy taste could help stimulate good appetite. It’s not too hard to make this dish back home by yourself.
The basic ingredients include 1kg mud carp’s head, 80g chopped chilli, 20g minced garlic, 20g shredded ginger, and shredded spring onion to taste.
First of all, use 1tbsp ginger juice with wine, ½ tsp seasoned salt, 1 tbsp cooked oil and 1 tsp cornflour to make the mainade.
Seasoning: soy sauce to taste.
Secondly, cut the fish’s head into pieces, wash and drain. Add the marinades to the fish in a plate and stir well.
Thirdly, mix the chopped chilli and garlic, and put them on the top of the fish head with shredded ginger. Heat the fish in a steam box over high heat for about 10 minutes.
Fourthly, pour off the plate juices and sprinkle the fish head with spring onion shreds.
Finally, pour 3 tablespoons of boiling oil over the fish head and ad the seasonings to taste. Then, it’s ready to be served.
