Stewed Streaky Pork (红烧肉)
I’ve been working quite hard these days with my dissertation and finally, it’s done. After submit it, my supervisor advice me to give a big sigh of relief. So I determine to cook something nice for myself today as rewards.
I decide to try something new and I picked the dish of Stewed Streaky Pork. However, though the dish is really nice, to make it is a huge challenge. The preparation process is so complicated that it’s nowhere near easy work.
The basic seasonings you need for making Stewed Streaky Pork include salt, sugar, soy-source, cooking wine, rice vinegar, Chinese cinnamon, star anise, garlic, orange skin, ginger, cayenne and dried chili. Seeing such a long list of integrants, you must understand what I mean with “complicated” now.
First of all, you need to cut the streaky pork into small cubes, which should be no larger than your thumb. Then, fry the pork in hot oil in a frying pan with sugar, garlic, cinnamon, star anise, cayenne, dried chili, orange skin and ginger, till the pork turn into dark red. Thirdly, add some salt, a big spoon of soy-source, 1/5 spoon of rice vinegar, half spoon of sugar, two spoons of cooking wine and some water. The pork should be submerged in the liquid then. Cook it with gentle heat for around one and a half hours, till the liquid began to dry up.
Before serve the dish, add some chopped green onions to make it nicer. You can enjoy yourself then. Good appetite!
