Stir Fried Chicken with Dried Chili (辣子鸡丁)

I’ve just learnt a new recipe and would love to share it with other cooking lovers. It’s a Chinese dish called Spicy Diced Chicken, or Stir Fried Chicken with Dried Chili.
First of all, you need to make the marinade with the following indigent: some egg white, 1 tbsp dark soya sauce, ¼ tsp Minced garlic, ½ tsp sesame oil, ¼ tsp sugar, ½ tsp rice vinegar, ½ tsp salt, and 1 tbsp cornstarch solution.
Then the chicken breast should be cut into 1″ cubes. Mix the dice chicken with marinade for 30 minutes. All the ingredients are placed in a small bowl for the sauce and mix them well.
After getting all the preparation work done, heat some oil in wok to 205C/400F. Add chicken and fry it for around 30 seconds. Remove the chicken and drain off all but 1 tablespoon oil. Heat oil and fry chiles until fragrant. Add pepper corn and spring onion, stirring and tossing all together.
Then, return the chicken to the wok, stir briefly and add sauce mixture and cook, stirring, just until thickened. Remove from heat and sprinkle with nuts.
